While a decrease in the consumption of traditional Japanese cuisine is noted, it is becoming increasingly popular around the world, particularly in the United States and Europe. Japanese cuisine is listed as a UNESCO intangible cultural heritage. If we consider that the spread of Japanese cuisine on a global scale has become a reality, unfortunately, "Dashi", which constitutes the basis of Japanese cuisine, is not systematically present. In this context, during a stay in France, a country with a great gastronomic culture, it was noted that the "Misoshiru" of certain Japanese restaurants was devoid of flavor. If this situation is left unaddressed, a misrepresentation of Japanese culinary art risks spreading around the world. It is in this context and with the desire to spread the flavor of “Dashi” that “Makurazaki France Katsuobushi” was born.
The project began in 2013. At the time, Japanese cuisine was highly prized for its healthy appearance and delicate, distinctive seasoning. More than 10,000 Japanese restaurants were already established in Europe. The town of Makurazaki, located in Kagoshima Prefecture, has a historical heritage linked to bonito fishing that dates back more than 300 years. Makurazaki thus represents the main source of production of real "Katsuobushi" in Japan, produced in accordance with the greatest tradition using ancestral methods. The goal is to offer authentic "Katsuobushi" in Europe and around the world. Driven by this ambition, ten companies linked to the entire Makurazaki Seafood Processing Cooperative have developed the “Makurazaki France Katsuobushi” project.
